Natural Cider Making – Saturday 11th October, 10am to 4pm

Hands on workshop in cider making.
Leading you through the techniques and theory involved in cider making.
We will select and harvest apples from the ISSA heritage apple orchards, mill and press them using a variety of techniques.
You will come home with some cider-to-be, and the knowledge to be able to make your own!

We will look at:

  • Apples – taste profiles and selection
  • Apple harvesting for cider
  • Milling, mashing and pressing techniques, focussed on home production
  • Fermentation process – stages of fermentation and facilitation of natural yeast vs bought-in yeast
  • Blending, maturation, decanting, priming, bottling and other storage and sweetening solutions
  • Measuring and control – how to calculate ABV
  • Faults – common issues and how to deal with these
  • Use of pommace
  • Other products from the process – Apple Cider Vinegar, apple juice
  • Tastings of natural cider, cider vinegar and apple juice

Please bring your own food-grade container.

  • Our cafe will be open, serving tea, coffee, light lunches and sweet treats.
  • Workshops suitable for adults only – children under 18 years are not permitted to attend .

Tutor Alice Cade

Alice grew up in the home cider-making tradition in a family of apple enthusiasts. With over 20 years experience producing natural cider and apple juice, and homebrew wines. She is a regular at Apple Days around the country including Cloughjordan Ecovillage and Common Knowledge with her homemade pedal-powered scratter and hydraulic press.
