This root vegetable goes back to the Middle Ages. Harvested in winter, it has long tapering roots with a distinct flavour which has been likened to oysters! Delicious in a vegetable stew. If left in the ground, the flower will delight as they bloom all summer long with brilliant large purple daisy-like flowers. The seed heads are puff balls that shine like golden orbs in the sun.
